INGREDIENTS
For the Omelette:
2 eggs
2 cups torn baby spinach leaves
ΒΌ teaspoon onion powder
salt and pepper to taste
OPTIONAL: 1/8 teaspoon of cumin (cumin helps with weight loss)
For the Oatmeal:
1/2 cup of oats
3/4 cup of water
For the toppings:
1 tablespoon of flaxseed or sesame seeds
INSTRUCTIONS
In a bowl, beat the eggs, and stir in the baby spinach. Season with onion powder, cumin, salt, and pepper.
In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.
While the eggs are cooking, prepare the oatmeal. Place 1/2 cup of oatmeal in bowl and 3/4 cup of water. Microwave for 90 seconds.
Place egg on top of oatmeal.
Sprinkle with 1 tablespoon of flaxseed or sesame seed
